Banana Fritters with Pomegranate Caramel

Fritters
- 2 ripe bananas
- 2 eggs
- 1 cup all purpose flour
- 3 TB sugar
- 2 TB milk or non-dairy milk
- 1 TB butter, melted
- 1 tsp baking powder
- 1 tsp vanilla
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1/8 tsp ginger, ground
Pomegranate Caramel
* I suggest making this ahead
- ½ cup brown sugar
- 1/3 cup water
- 1 cinnamon stick
- 2 cloves
- 3 TB pomegranate molasses
Instructions
For Fritters
- Mash bananas in a large mixing bowl
- Add almond milk, eggs, melted butter and vanilla to mashed banana.
- Mix in flour and sugar
- Add baking powder, cinnamon, nutmeg and ginger
- Heat oil in a frying pan on medium heat
- Pour batter using an ice cream scoop and cook for approx. 2-3 minutes or until the edges brown and the middle bubbles. Then flip and cook for approx. 1 min.
For Pomegranate Caramel
- In a small sauce pan combine brown sugar, water, cinnamon and cloves and boil until reduced by half and thick (syrupy)
- Remove from heat and add pomegranate molasses
- Let cool and serve with banana fritters.
