Banana Fritters with Pomegranate Caramel




Pomegranate Caramel

For Fritters

  1. Mash bananas in a large mixing bowl
  2. Add almond milk, eggs, melted butter and vanilla to mashed banana.
  3. Mix in flour and sugar
  4. Add baking powder, cinnamon, nutmeg and ginger
  5. Heat oil in a frying pan on medium heat
  6. Pour batter using an ice cream scoop and cook for approx. 2-3 minutes or until the edges brown and the middle bubbles. Then flip and cook for approx. 1 min.

For Pomegranate Caramel

  1. In a small sauce pan combine brown sugar, water, cinnamon and cloves and boil until reduced by half and thick (syrupy)
  2. Remove from heat and add pomegranate molasses
  3. Let cool and serve with banana fritters.
