Vegan Guava Cheesecake with Granola Crust

Vegan Guava Cheesecake with Granola Crust



For Cheesecake

  • 12 oz. firm tofu
  • 8 oz. vegan cream cheese
  • 8 oz. guava cheese, thinly sliced
  • ¾   cup succanat
  • ¼ cup agave nectar
  • 3 Ener-G egg replacers
  • 1 TB Vanilla Bean Paste

For Granola Crust

  • 1 cup granola, finely crumbled (use food processor)
  • 5 Tb vegan margarine, melted


  1. Preheat oven to 350 degrees
  2. Add melted butter with granola crumbles and mix until it sticks
  3. Press into the bottom of a 9” springform pan and bake for 10 minutes
  4. Place slices of guava cheese on top of granola crust, (you may have extra slices left over)
  5. Using a food processor, process vegan cream cheese and tofu until blended
  6. Add succanat and agave nectar and mix
  7. Add egg replacer and mix just until blended
  8. Pour onto crust and bake for 30 minutes until firm
  9. Turn off the oven and slightly open oven door, allow cheesecake to cool in oven completely before removing
