Add strawberries, sweetener of choice and ginger to a bowl. Macerate with a potato masher or fork until pulpy.
Let rest for 30 minutes (strawberries will form a syrup)
Strain syrup into a large pitcher
Set pulp aside
Add lemon juice and water to syrup and mix well
Taste to make sure it’s sweet enough. Sometimes I add agave nectar, a liquid sweetener, if I want it sweeter. It’s important to use a liquid sweetener at this stage if you MUST add a sweetener. Adding sugar crystals at this stage will result in your drink being grainy.
If you want the drink to have more texture, add some of the pulp that you set aside earlier
Fill your glass with ice and pour 3/4 of Strawberry Ginger Lemonade. Top it off with sparkling water.
