Vegan Guava Cheesecake with Granola Crust

For Cheesecake
- 12 oz. firm tofu
- 8 oz. vegan cream cheese
- 8 oz. guava cheese, thinly sliced
- ¾ cup succanat
- ¼ cup agave nectar
- 3 Ener-G egg replacers
- 1 TB Vanilla Bean Paste
For Granola Crust
- 1 cup granola, finely crumbled (use food processor)
- 5 Tb vegan margarine, melted
- Preheat oven to 350 degrees
- Add melted butter with granola crumbles and mix until it sticks
- Press into the bottom of a 9” springform pan and bake for 10 minutes
- Place slices of guava cheese on top of granola crust, (you may have extra slices left over)
- Using a food processor, process vegan cream cheese and tofu until blended
- Add succanat and agave nectar and mix
- Add egg replacer and mix just until blended
- Pour onto crust and bake for 30 minutes until firm
- Turn off the oven and slightly open oven door, allow cheesecake to cool in oven completely before removing
