How to Make Green Seasoning

This is a guide and makes about 1-2 cups worth of seasoning.  Also this recipe is different than what you see in the video….because like I said, I like to vibe while I cook.  But I use this recipe to reference ingredients.



  1. 12 medium yellow onion, rough chopped
  2. 1 shallot, halved
  3. 1 bunch scallion / green onion
  4. 1/2 yellow bell pepper
  5. 1/2 green bell pepper
  6. 68 garlic cloves
  7. 2 TB fresh thyme leaves
  8. 10 culandro leaves OR ⅔ cup Cilantro Leaves
  9. 3/4 cup parsley, not packed tight
  10. 1/2 cup watercress, not packed tight
  11. 1/41/2 scotch bonnet
  12. 1/3 cup sour orange or lime juice
  13. salt, enough to heighten the taste of flavors
  14. 1tsp All Purpose Latin Seasoning
  15. 1 tsp All Purpose Caribbean Seasoning
  16. 6 cloves
  17. olive oil



  1. Place all ingredients in food processor and blend until it comes together.
  2. While blending, stream in enough olive oil to make cohesive and smooth. This shouldn’t amount to more than about 1/8 cup.  You’ll have to eyeball this one and trust your self.  You got this! Your taste buds are THE GUIDE and they work better than the strict measurements of a recipe. Have fun, taste it out, add along as you go.
