Tostones with Saltfish and Avocado | Vegan

Ingredients
- Frozen Tostones (for ease)
- OR 2 Green Plantains
- 8oz hot water
- coconut oil for frying (enough for covering plantains)
- a splash of white vinegar, sour orange or fresh lime
- himalayan pink sea salt
- Avocado
- Vegan saltfish (click for recipe)
Instructions
- HOW TO MAKE TOSTONES
- Prepare tostones according to package directions
- OR

Gather your fresh green plantains and get ready to fry!

Fill a medium size bowl with 8 oz hot water

Add 2 TB white vinegar, sour orange or fresh lime

Add 2 tsp salt

Mix well, mixture should be brine-ey

Heat enough oil in pot or pan to cover plantains

Cut plantains into 1-2 inch chunks

Heat oil and fry plantains until lightly brown on all sides

Remove and flatten with tostonera

Soak the plantains in the brine water, remove and make sure there is not excess water and carefully add back to oil

Recrisp the plantains

Remove and drain on paper towel to remove excess oil
- Once removed from heat, immediately add salt while still warm
- Top with sliced avocado
- Add vegan saltfish
- Enjoy!
