Fig Cupcake with Goat Cheese Frosting

Ingredients

For Cake

  • 1 cup flour 
  • ½ cup coconut milk
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ cup brown sugar
  • ½ cup cane sugar
  • 1 egg
  • ½ cup butter
  • 1 cup fresh fig puree

Goat Cheese Frosting

  • 4 TB Butter
  • 4oz Goat Cheese
  • ½ cup powder sugar (may use more if desire more sweetness0

Instructions

For Cake

  1. Preheat oven to 350. Prepare muffin tray
  2. Cream butter and sugars for about 5-7 minutes
  3. Add egg and mix for about 1 minute
  4. Add fig puree to cream mixture and mix for about 5-7 minutes (the end result should be a creamy batter)
  5. Stir flour, baking powder, and cinnamon together
  6. Alternately add flour mixture and milk starting and ending with flour 3 times
  7. Bake 20-23 minutes
  8. Yields approx. 20 cupcakes

Goat Cheese Frosting

  1. Cream butter and goat cheese until well combined. Add powder sugar until desired sweetness is achieved.
