Fig Cupcake with Goat Cheese Frosting

Ingredients
For Cake
- 1 cup flour
- ½ cup coconut milk
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ cup brown sugar
- ½ cup cane sugar
- 1 egg
- ½ cup butter
- 1 cup fresh fig puree
Goat Cheese Frosting
- 4 TB Butter
- 4oz Goat Cheese
- ½ cup powder sugar (may use more if desire more sweetness0
Instructions
For Cake
- Preheat oven to 350. Prepare muffin tray
- Cream butter and sugars for about 5-7 minutes
- Add egg and mix for about 1 minute
- Add fig puree to cream mixture and mix for about 5-7 minutes (the end result should be a creamy batter)
- Stir flour, baking powder, and cinnamon together
- Alternately add flour mixture and milk starting and ending with flour 3 times
- Bake 20-23 minutes
- Yields approx. 20 cupcakes
Goat Cheese Frosting
- Cream butter and goat cheese until well combined. Add powder sugar until desired sweetness is achieved.
