Red Velvet Waffles with Mascarpone Cream and Maple Cacao Syrup

Take your favorite dessert and have it for breakfast!

Ingredients

For Waffles

  • 1 ½ cup all purpose flour
  • 1 cup buttermilk
  • ½ cup sugar
  • 2 eggs, beaten
  • 2 oz. butter, melted
  • 3 tsp red food color
  • 1 ½ tsp cocoa powder
  • ½ tsp vanilla
  • ½ tsp baking soda
  • ½ tsp white vinegar

Mascarpone Cream

  • 4 oz. mascarpone cheese
  • 4 TB powder sugar

Maple Cacao Syrup

  1. ½ cup maple syrup
  2. 23 oz. dark chocolate or semi-sweet chocolate bar

Instructions

For Waffles

  1. In small bowl mix red food color, cocoa powder and white vinegar
  2. In a large bowl, mix flour, sugar, and baking soda 
  3. Add buttermilk, butter and eggs to flour mixture, mixing after each addition
  4. Add vanilla and mix well
  5. Lastly add food color to mixture
  6. Ladle mixture into pre-heated waffle iron.
  7. Yields 12 individual square waffles.

Mascarpone Cream

  1. Whip ingredients together with a mixer or whisk until creamy.

Maple Cacao Syrup

  1. Combine ingredients in small saucepan on low heat.  Whisk until chocolate begins to melt and serve on top of waffles.
