Red Velvet Waffles with Mascarpone Cream and Maple Cacao Syrup

Ingredients
For Waffles
- 1 ½ cup all purpose flour
- 1 cup buttermilk
- ½ cup sugar
- 2 eggs, beaten
- 2 oz. butter, melted
- 3 tsp red food color
- 1 ½ tsp cocoa powder
- ½ tsp vanilla
- ½ tsp baking soda
- ½ tsp white vinegar
Mascarpone Cream
- 4 oz. mascarpone cheese
- 4 TB powder sugar
Maple Cacao Syrup
- ½ cup maple syrup
- 2–3 oz. dark chocolate or semi-sweet chocolate bar
Instructions
For Waffles
- In small bowl mix red food color, cocoa powder and white vinegar
- In a large bowl, mix flour, sugar, and baking soda
- Add buttermilk, butter and eggs to flour mixture, mixing after each addition
- Add vanilla and mix well
- Lastly add food color to mixture
- Ladle mixture into pre-heated waffle iron.
- Yields 12 individual square waffles.
Mascarpone Cream
- Whip ingredients together with a mixer or whisk until creamy.
Maple Cacao Syrup
- Combine ingredients in small saucepan on low heat. Whisk until chocolate begins to melt and serve on top of waffles.
