Black Bottomed Avocado Lime Cheesecake

Ingredients
For Cheesecake
- 2 8oz. pckgs of cream cheese
- 1 ½ c mashed avocado (approx. 2 avocados)
- 1 ¼ cup sugar
- 1 tsp lime zest
- Juice of 1 lime
- 3 eggs
For Crust
- 1 c chocolate wafers
- 4 T butter melted
Instructions
- Preheat oven to 350 degrees
- Process chocolate wafers in food processor until resemble fine crumbs
- Add melted butter to crumbs until it begins to stick together
- Press the chocolate crumb mixture into bottom of 9” springform pan
- Bake for 10 minutes; remove from oven and let cool
- Blend avocado and cream cheese in Stand Mixer until well blended
- Add succanat and mix well
- Add lime juice and mix well
- Add lime zest and mix well
- Add eggs 1 at a time
- Pour into springform pan and bake for 1 hour
- Once finished baking, turn off oven and slightly open oven door. Let cheesecake cool in the oven for another 2-4 hours.
