Black Bottomed Avocado Lime Cheesecake



For Cheesecake

  • 2 8oz. pckgs of cream cheese
  • 1 ½ c mashed avocado (approx. 2 avocados)
  • 1 ¼ cup sugar
  • 1 tsp lime zest
  • Juice of 1 lime
  • 3 eggs

For Crust

  • 1 c chocolate wafers
  • 4 T butter melted


  1. Preheat oven to 350 degrees
  2. Process chocolate wafers in food processor until resemble fine crumbs
  3. Add melted butter to crumbs until it begins to stick together
  4. Press the chocolate crumb mixture into bottom of 9” springform pan
  5. Bake for 10 minutes; remove from oven and let cool
  6. Blend avocado and cream cheese in Stand Mixer until well blended
  7. Add succanat and mix well
  8. Add lime juice and mix well
  9. Add lime zest and mix well
  10. Add eggs 1 at a time
  11. Pour into springform pan and bake for 1 hour
  12. Once finished baking, turn off oven and slightly open oven door. Let cheesecake cool in the oven for another 2-4 hours.
